Lasagna Recipe - (Quick & Easy)

This Lasagna recipe was given to me by my kind mother in law "Dorothy Myers" shortly after my husband and I were married 20 beautiful years ago.  I have made this recipe time and again and every time it has been a hit for family and friends!  You will be surprised how quick and easy it is to prepare this recipe.  Surprise yourself ..... Go ahead & give it a try!

Lasagna:
1 pound of ground round
1/4 tsp garlic powder
1 Tbsp of sugar
1 tsp of hot pepper flakes (optional)
3 Tbsp parsley flakes (or 5 Tbsp fresh chopped flat leaf parsley)
1 Tbsp Basil
2 - 6 oz cans of tomato paste
1 large (28 oz) can pureed tomatoes
1 box of Barilla "No boil" flat lasagna noodles
1 - 24 oz container of small curd cottage cheese
2 beaten eggs or 3 egg whites beaten
1/2 tsp pepper
1/2 grated parmesan cheese
1 1/2 pound of shredded mozzarella cheese (2 pounds if you like extra cheese)

Preheat oven to 350 degrees. Brown meat slowly and drain fat.  Add to ground beef: garlic powder, 2 Tbsp parsley flakes, Basil, 2 cans of tomato paste, & can of tomato puree.  Simmer on low for 5-10 min.  Then set aside.
In a separate bowl add the beaten eggs and cottage cheese, parmesan cheese, and the remainder 1 Tbsp of parsley. Mix well.
In a 9 x 13 pyrex dish or pan begin to evenly layer your ingredients.  First add the marinara/meat sauce, followed by *noodles, marinara/meat sauce, cottage cheese blend, mozzarella cheese, noodles, marinara /meat sauce, cottage cheese blend, mozzarella, noodles, marinara/meat sauce, cottage cheese blend, topped off with Mozzarella cheese.  I'll sprinkle the top with a little more parsley because it just looks pretty!  Spray a sheet of foil with non stick spray. Spray side down cover the lasagna tightly and bake for 1 hour.  Remove foil after an hour and *broil the top for 4 min so that the cheese gets a light golden brown.  Remove from oven and let rest for 15-20 minutes before serving.  Serve with a salad and side of garlic bread. Enjoy!

*Helpful Tips: You will have to break the noodles (i use the edge of the counter) to cover in a single layer over the sauce.
Be careful not to over broil your lasagna!  I've done that...and it's not pretty!  I would suggest you set an alarm or just wait by the oven for the broil time.

  1. WOW! Tracy subbed grated zucchini & carrots for the beef in mine and it's fantabulous! The salad is wonderful - esp the dressing - and the gourmet brownies taste like they're from Brownie Points! The cooking class was awesome - can't wait for the next one - got a great meal for my fam + nice extras like a cute mushroom kitchen towel and lit from Wms. Sonoma. I'm in heaven!
