Oktoberfests: Crockpot Brats and Chops

This past weekend I enjoyed the afternoon serving (and tasting!) German beer to the patrons of our local Oktoberfest. The cool, breezy and overcast weather was overshadowed by the lively atmosphere and fantastic German food! The sauerkraut, Brats, and German pastries were amazing!
I decided to try and duplicate one of the most delicious German dishes I sampled at this event. Slow cooked Pork, Brats, and apples . The chef at the booth (New Albany Country Club) said it was very easy to make. Just mix the following ingredients together: pork shoulder (pork of your choice), sliced brats, sauerkraut, dark German beer, apples, and caraway seeds, salt and pepper to taste and slow cook. This morning before heading out for the day, I decided it was time to make this dish with a few twists and additions. Since I was going to be gone most of the day, I thought the crockpot would be the best choice. Also, when I returned home, the house would smell as though I had been cooking all day. Love that!!!

Crockpot Brats & Chops

Serving Size: Feeds family of four with leftovers

Note: If your not a big sauerkraut fan, just omit this ingredient and serve over rice with steamed veges on the side. Also, you may substitute chicken breast if you do not care for pork.

Ingredients: Three Brats, 1 pork tenderloin, 1/2 of white onion thinly sliced, 1 bottle of dark beer (I used Sam Adams), 1tsp of caraway seeds, salt and pepper to taste, 1/2 of a crisp apple skinned, cored and sliced in small pieces, 1 large red potato peeled and sliced into small pieces, 1-2 pound bag of sauerkraut, 2-3 bay leafs, and one slice of raw bacon, olive oil for sauteing.

Preparation: Slice pork tenderloin into 2 inch width pieces (about 6 pieces). Brown the pork in olive oil and add to crock pot. In same pan, add a little more olive oil and slightly brown your sliced (1/2"-1" pieces) brats with onion, caraway seeds, salt and pepper. After the brats are browned and onion cooked through, add one bottle of beer and bay leaves. Simmer brats for about 5 min. then add ingredients to crock pot. Add one bag of drained sauerkraut to pot, one strip of raw bacon, apples and potatoes and 1 cup of water and toss. Cook on low for 6-8 hours or on High for 4-6 hours.

I would recommend serving this dish with a nice garden salad with lots of fresh veges, your dressing of choice, and warm buttered bread.
