Chicken Croquettes-Heirloom Recipe

Heirloom recipes are the treasure of every kitchen and "Chicken Croquettes" is one of my mothers best recipes! The combination of the soft rice, chicken, & herbs in a crunchy fried shell is AMAZING! My mother "Pamela" would serve these chicken croquettes topped with a homemade simple white cream sauce and either steamed veges or side salad! This recipe is easy to prepare, comforting, & simply delicious! Give it a try....you'll love it! Buon Appetito!
Chicken Croquettes: Ingredients: Serves 2. I always double this recipe!....2 cups of cooked finely chopped chicken breast (Hint: a rotisserie chicken works great).....1 cup cooked short grain brown rice...Lundberg Farms 01552 Eco-Fr Short Brown Rice (Google Affiliate Ad)....1/2 cup finely chopped celery....2 Tbsp of finely chopped white onion.....1/4 tsp poultry seasoning...few sprigs of chopped flat leaf parsley (save some to sprinkle on top later)....1 beaten egg.....vegetable or Canola oil for frying.....3/4 cup dry bread crumbs....salt and pepper to taste. Instructions: In a pan...All-Clad Covered Stainless Steel Saute Pan, 3 qt. (Google Affiliate Ad) saute' the onion and celery till soft and cooked through. In bowl, combine the cooked celery and onion, rice, chopped chicken.
Stir in egg and seasonings and parsley. In separate bowl add bread crumbs. In a frying pan, heat up the oil for frying the croquettes. Form the croquettes into tightly compacted egg shaped pellets
Roll croquettes into bread crumbs and carefully drop into hot oil. Helpful tip: Let the croquettes get a good golden brown crust before rolling to other side or they may fall apart in the oil.
Basic White Cream Sauce Recipe: Ingredients: 4 Tbsp butter....4 Tbsp flour....2 cups of milk...salt, pepper, & freshly grated nutmeg (or 1/8 tsp of nutmeg) Directions: Melt the butter in a saucepan on low heat. Add the flour.
Stir with a whisk until smooth and creamy. Add the milk and stir. Turn the heat up to medium high. Cook for about three minutes while stirring until sauce thickens to gravy consistency. Add salt, pepper, & nutmeg to taste.
