Quiche - Bacon, Potato, & Cheese

Serving size: for 6-8 people...... Ingredients:...... 6 eggs whipped 1 cup of half & half 1/2 bag of shredded "Simply potatoes" 1 cup of shredded swiss cheese or your favorite cheese. 1/4 cup parmesan cheese 3 strips of cooked crispy bacon (chopped) 1 cup of chopped steamed broccoli (if you like..may substitute with asparagus) 1/4 cup of white onion olive oil 1 tsp salt 1 tsp pepper 1/4 cup of fresh chopped flat leaf parsley, basil. (May also you fresh Thyme)..... Directions:...... Pre heat oven to 325 degrees. Assemble pie crust (see recipe below)and bake for 10 min.or until dough appears cooked. Set pie crust aside to cool. Note: If short on time, refrigerated pre made pie crust would be just fine. cook the white onion on medium heat in aprox. 1 Tbsp of olive oil until cooked through (translucent in color). Takes about 4-5 min. Set onion aside to cool. Mix together in bowl the eggs, half & half, & cheeses, salt, pepper, & fresh herb, & onion and set aside. Layer in pie shell: shredded potatoes, broccoli, & bacon. Pour the cheese egg mixture over the veges & bacon. Bake quiche @ 325 degrees for 1 hour or until egg mixture is set. It is suggested that you place your pie plate on a rimmed pan to catch any spill over during the baking process. Buon Appetito!..... No Fail Pie Crust Recipe -..... Serving size for: 1 nine inch pie plate..... 1 1/4 cups all-purpose flour 1/4 teaspoon salt 1/2 cup butter, chilled and diced 1/4 cup ice water..... Directions:..... In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 20 min. Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate. Prick bottom of pie crust with fork tines just prior to baking.....
