Chicken, Bacon, & Caesar Panini ~ Easy!

This panini is so tasty & so easy to make....perfect for busy families! The combination of flavors & textures certainly take this sandwich over the top!!! From the crispy exterior and oozy melted warm cheese, crunchy bacon, thinly sliced chicken, cold thinly sliced iceberg lettuce, and drizzle of caesar dressing all in one bite.....THE BOMB! With a little prep work, all the ingredients, & equipment on hand and ready to go, it takes no more then 15 minutes to assemble, press, and have two hot panini's on the table for your hungry family! I suggest Serving this panini with a bowl of soup for panini dipping. A creamy tomato basil or creamy butternut squash soup would be delightful! Buon Appetito!......................Suggested equipment: Panini press. I love my Breville panini press Breville Smart Grill (Google Affiliate Ad)........................Ingredients: Serving for 4 sandwiches......1 package of boneless skinless chicken breast or Easy packaged precooked seasoned chicken breast strips or breasts.....1 Tbsp of vegetable oil.....1 package of sliced provolone cheese, or sliced gruyere or mozzarella cheese.....8 slices of cooked/drained crispy applewood smoked bacon or Easy 1 package of Hormel precooked packaged bacon.....Good thinly sliced artisan bread (I love sourdough) from the grocery bakery (helpful tip: ask baker to slice the bread if not already sliced)....prepared homemade caesar dressing (see below for recipe) or Easy bottle of your favorite caesar salad dressing.....1 cup of water.....iceberg lettuce chilled and thinly sliced......Optional chopped jarred jalapeno peppers (for that added delightful heat)...... Preparation: Prepare seasoned chicken and crispy bacon the night before or earlier in the day to make Panini making time quick and easy!.....In a skillet add vegetable oil & turn heat to Medium/Hi. Season your chicken breast with salt & pepper & place chicken in heated skillet & pan sear the breasts on both sides for about 3-4 minutes. Add 1 cup of water to chicken, cover and simmer on low for 45 minutes or until chicken is tender. Plate & cool chicken breast then refrigerate. Cook bacon according to package instructions and set aside......Panini Time!!!......Heat up your panini press, slice cooked chilled chicken breast in thin slices. Place two pieces of the the sliced bread onto the press grill. Place a single layer of thinly sliced cheese on bread followed by a layer of thinly sliced cooked seasoned chicken breast and lastly, another layer of cheese. Close the press and cook till desired doneness. Remove sandwich from press and carefully separate the bread slices and put in a couple strips of crispy bacon, handful of shredded lettuce, and drizzle caesar dressing. I like to spice it by adding some chopped jared jalapeno peppers! Slice the sandwich in half &.....BAM!!!...your good to go!!! ......Homemade Caesar salad dressing recipe....1 tsp of capers, 1 egg yolk, 1/2 cup of EVOO, lemon (juice of 1/4 lemon), 2 Tbsp of 1/2 & 1/2 or whipping cream, 1 small garlic clove crushed, 1/2-3/4 tsp red wine vinegar. Puree all ingredients together in a magic bullet (one of my favorite kitchen gadgets!) Magic Bullet Hi-Speed Blender / Mixer System (Google Affiliate Ad) or vigorously whisk ingredients together in a bowl. Use this dressing on your panini's or on salad with fresh grated parmesan cheese!
