Butternut Squash Soup

I Just can't get enough soup during these beautiful cool fall breezy days! This soup is one of my favorites this time year and is so easy to prepare and delicious according to our son "Sam"! A soup your whole family will love! Serve it with your favorite sandwich on the side! Grilled Cheese or panini would be awesome! Buon Appetito! xo Butternut Squash Soup: Ingredients: Serves 6 1 (2 to 3 pound) butternut squash, peeled and seeded EVOO (2 Tbsp) 2 tablespoons unsalted butter 1 medium onion, chopped 6 cups chicken stock 1 cup of 1/2 & 1/2 (OPTIONAL~for extra creaminess) Nutmeg (aprox. 1/2 tsp) Salt and freshly ground black pepper Creme fraiche and chopped chives Directions: Cut squash into 1/2-1 inch chunks.
In large pot add EVOO. Add onion and cook until translucent, about 8 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes.
Remove squash chunks with slotted spoon and place in a blender with a little of the soup liquid and puree. Return blended squash to pot. Add 1/2 & 1/2. Stir and season with nutmeg, salt, and pepper. Top the soup off with creme fraiche & chopped chives & Serve. Buon Appetito!
