Red Beans & Rice With Smoked Sausage

This easy dish is one of our family favorites! I love this comfort dish this time of year when it's cold & dreary outside as it gives back so much comfort and happiness!! I love the "trinity" (onion, celery, & bell pepper) simmering away on the stove in bacon drippings. The smell permeates your entire home with the most amazing smells & aroma!

1 small bag of dried kidney beans boiled in 4 cups of water or 1 carton of chicken broth .
slice some smoked sausage! I found this sausage at one of my favorite shopping places....Costco!
In your crock pot/slow cooker, combine the trinity, with the beans and water, the sliced smoked sausage and these seasonings: 1/4 tsp of cayenne pepper, 1 tsp of dried basil, 1/2 tsp of black pepper, 1/2 tsp of salt, if you used water add: 2 Tbsp of "better then bouillon" chicken base or two chicken bouillon cubes, 2 bay leaves, and the three bacon strips chopped.
Cook on "High" for 2 hours, and low for 4 hours!
spoon your red beans & sausage over cooked long grain white rice, top off with shredded cheddar cheese and sliced green onions. I like a little more heat....so I add additional hot sauce! Buon Appetito! xo
